I told you about me and how I got to this place where I am eating this crazy diet in my last post, but what I didn’t tell you is that I fell off the wagon for the last 7 days and feel like crap. While that sucks it is what motivated me to start this blog and hopefully have some accountability with my food, what I feed my family and how much I spend on groceries.
Once a week, usually on Sunday mornings after breakfast, I pull out my cook books, get on my computer and plan my families meals for the week. That is how my life works…..I plan and plan and plan and PLAN everything. I would never just wonder into a grocery store without a list to go shopping for the week. It wouldn’t happen. I am not one of those people that only buys whats on the list, but I have to know what I am supposed to buy and what I am going to be cooking for the week otherwise eating this way would NEVER work. I have to plan my meals. I can’t eat out. Inevitably if I do….I feel like crap. It is just the way it is. It sucks and occasionally I just do it because it is easy…….but I always pay for it one way or another.
So the only way I know how to start this is in the here and now.
My families monthly food budget is $800. That is supposed to include everything we buy at the meat market, grocery, Sam’s Club, Etc. (food, laundry detergent, dish washing soap, toilet paper, etc.) I go over every month. I suck. I know that people feed and clean more people that I do on way less than that. I am not one of those people. I feed 2 adults, 1 14-year-old, and a 4- year old breakfast and dinner every day and I take my lunch to work every day. I don’t have any cost saving tips. I am trying to do better this year…..that is all I can promise.
Today I spent $106 on groceries. That has to be an all time low for me…….seriously…… an all time low. I had several things in the freezer and I knew that I would be writing this so I was extra careful to not overspend…..I am sure that it won’t last long, but my husband will be happy in the mean time.
This weeks dinner menu:
Sunday: Buffalo Chicken Meatloaf, brussel sprouts with bacon and apple, mashed cauliflower, mashed potatoes, carrots, celery, and chicken nuggets
Yes, I make the rest of my family different things. They don’t have to eat like I do so I don’t force them to. We usually have one main dish and sides to please everyone except when the main dish is spicy. My 4-year-old doesn’t like spicy.
The buffalo chicken meatloaf rocks my world. I usually make double the recipe and eat it for lunch. It is a big hit with the males in my house as well. You can find the recipe here:

I usually cut the celery in half. The first time I made it I made the mistake of cutting the celery to thick and we decided as a family it was just to crunchy. If I am using Tabasco for my hot sauce I stick with 3 TBS, but tonight I used Red Hot and used 4 TBS and wish that I had used a bit more. You will have to play with it to see what you like.
For the brussel sprouts (yes I know ewwwww gross….but they have bacon. Everything tastes good with bacon.) I cut up 3 pieces of bacon and sauteed them about half way. While that was happening I cut 1 fresh bunch of sprouts (about a pound) in half. I put them in my pan with a little water and covered it stirring occasionally. When they were bright green I added one diced red apple (I have no idea what kind) I let that heat for about 5 more minutes and then sprinkled some red wine vinegar on them and put them in a bowl. *I will be the only one in my house to eat this*
For the mashed Cauliflower I put about 3/4 a cup of chicken stock in a pot and a small head of cut of cauliflower in and covered it up on Med high heat. When the cauliflower was mushy I put it in my mixer and added some coconut butter and let it mix itself up for about 5 minutes. I can never get mine to look like all the fancy photos on the internet, but it gives me the consistency of mashed potatoes and tastes yummy and that is all I care about.
I made mashed potatoes, pulled out some left over carrots, cut up some extra celery (my daughter LOVES celery), heated up some chicken nuggets, and everyone else was happy.
I will try to remember to take photos next time, but this is really about my being accountable……not about you all seeing how pretty my food is 🙂
Monday: Cincinatti Chili, mac n cheese, cauliflower
Tuesday: Pork roast with carrots
Thursday: My husband takes the kids to chic-fil-a every Thursday and I work late so I have leftovers again
Friday……..who knows. probably left overs again.
I am also planning to make tortilla-less chicken soup tomorrow for fill in food.
I will post recipes and hopefully some photos with some much shorter posts later this week.
